Kimchi is a staple Korean banchan (side dish) made from fermented vegetables and a variety of Korean seasonings – think sauerkraut, but with Korean flavours!
Traditionally kimchi has a spicy and tangy taste, which deepens and improves as it continues to ferment.
Kimchi can be eaten as a delicious side, or can provide the base for main meals such as stews, broths, fried rice, grilled cheese, and many more!
Kimchi is becoming more popular in the West as there is growing evidence that fermented food and drink can improve intestinal health and therefore support the immune system and are anti-inflammatory – improving good levels of good bacteria in the gut.
