Description

Makes 2 regular portions of Madras curry.

Instructions:

  1. Fry 1 onion in oil until soft with whole spices.
  2. Add 1 tbsp of chopped ginger.
  3.  and 1 tbsp chopped garlic; wait 30 seconds..
  4. Add in Fairley Spice mix; wait 30 seconds.
  5. Add in 1/2 tin chopped tomatoes.
  6. Cook until thickened.
  7. Add in some lemon juice and coriander stalks.
  8. Add in veg/meat/fish; wait 2 minutes.
  9. Add in some lemon juice and coriander stalks.
  10. Add 1/2 tin of carrot & coriander soup (with water 50/50).
  11. Cook down until thickened and veg/meat/fish is heated through.
  12. Add in 1 tbsp Mango Chutney.
  13. Sprinkle over chopped coriander.
  14. Serve with rice.
