Here is a recipe she has shared for us. I’m sure you’ll agree it sounds delicious. We’ll be ordering aubergines this week to try this. Let us know what you think.
Ingredients

- 1 large aubergine cubed
- 1/4 tsp salt
- 1 tbsp dark soy
- 1 sliced spring onion
- Small bunch of coriander
- 1 sliced spring onion
Steps
30 mins
- Add the chopped aubergine to a large bowl cover with water and sprinkle with salt. The aubergine will float place a plate on top and weigh it down
- After 15 mins drain pat dry and sprinkle with corn flour
- Add to a large frying pan or wok with a little ground nut oil. When it starts to colour add the garlic and finish cooking
- When its start to crisp add the soy sauce
- When cooked and sauce slightly thickened serve in a large bowl and sprinkle with thinly sliced spring onion and coriander, delicious with steamed sticky rice
