Also known as an eggplant, aubergines are a great and colourful addition to any plate. A sweet and slightly fruity taste when cooked. They cook quickly and the flesh is thin and tender so it does not need to be removed. Aubergines can also be halved, hollowed slightly, stuffed, and baked with vegetables and grains. What’s not to love!

Storage info: Keep in a cool spot, away from direct sunlight, and use soon after receiving them as they are quite perishable. If you store them in the refrigerator, use within 3 days. Also avoid storing next to bananas, tomatoes and melon which can cause them to over ripen.
